Pizzoccheri are a type of pasta from the Valtellina valley in the Italian Alps. While they resemble tagliatelle in shape, they're made from buckwheat flour, which has been grown in the valley since the 17th century. 

Pizzoccheri are traditionally served with cabbage, potato cubes and cheese. It's a typical hearty alpine dish that you will only find in this part of Italy. It doesn't get more hyper local than this!
