Fonduta is made with Fontina cheese, a famous local cheese that has been made exclusively in the Aosta Valley for centuries. Fonduta itself first appeared in a recipe book in 1854.
Unlike Swiss fondue, Italian fonduta does not contain alcohol, but it's equally rich in flavour. Fonduta is traditionally served with bread for dipping - it's even more divine when served with egg yolk and truffle shavings (or so we think)!
